Backpack
The backpack can be accessed when grabbing behind your shoulder, and items can be placed into it by putting them behind the shoulder. When you have the backpack out, all items will be in the circles, and can be taken by placing your hand in the circle so it changes to a light blue, and then grabbing the item. Items can also be added to the backpack the same way. If you exceed the 4 slots, a black arrow will be shown on the backpack, allowing you to switch between sets of 4 slots.

Bugs:
The backpack sometimes does not work properly inside the lighthouse, as the circle slots will not become highlighted and items can not be placed or taken. However items can still be stored by placing them over your shoulder, and can be retrieved outside of the lighthouse.
Journal
The journal can be accessed by grabbing just below your right hip. When the journal is in your hand, the pages you have collected are seen hovering around the journal, and can be taken with your left hand to view them. The pages can be taken when a paper rustling sound can be heard, and can be placed back into their transparent spot when you are finished reading them. To store pages, put them into the same area where your journal can be grabbed, which will automatically add them to the journal.

Bugs and issues:
-Occasionally your right hand can become stuck upside down (In the orientation when viewing the journal), after putting the journal away. I have found the only solution to this is to exit the game and then re-enter.

-Often when you go down to pick up an object on the floor with your right hand, your journal will be equipped instead. A solution to this is to change the "pages" binding to a different button on your right controller (Via the SteamVR menu), which can then instead be pressed when your hand is near your hip to equip and un-equip your journal.
Accessing the menu:
The menu button will likely need to be set in the SteamVR controls, and can take the player to the menu island and then back to the main game
Other controls
On the quest 2, the button to use the menu options is the grip button, not the trigger.
