Yes, managing dirty water can be a bit of a pain. In the mid game, even if rain is common enough, i just scrape the rain collectors and rely on wells to avoid the thing mentioned below by kellhus.
And indeed he's right about outpost management. I will make a guide regarding expeditions when i'm done with the big overhaul :)

the purifiers can draw and deposit water diagonally so they can use both dirty- and water storages
it rains often enough to supply a huge amount of water that you can trade
a 2. setup will likely give you more water than you can trade away
!important!: deactivate the purifiers and rain barrels if your storage is full because your idiots will pick up the dropped water and fill up their inventory until they are full (my 20 guys had about 5k water on them^^)
other tip: you can use useless recruits to repair outposts on the map once you have the tech. equipment doesnt matter in defending the outpost - only the security rating you buy 4 cash
Assuming we're talking potatoes:
At the start of the game with medium or low farmers, it's roughly 5 people per 3x5 plot (with some margin for error). With high level farmers the 3x5 plot could manage up to 8 people, maybe a bit more.
If we're talking rice (preferably protected from bad weather with roofs and artificial lights), it's close to the double. But it eats a lot of water.
If you start on the surface. Everything, beside walls must be rebuilt. Already existing doors or beds won't "work'.
If you start underground in a bunker, no, all items (in the bunker) are attributed to you and function as usual.
