Making this as short as I can, when you enter a choreographed fight (those sort of cinematic-like fights you seem not to have any control) you need to simply stop pushing your buttons and wait until the slow motion. That is when you are supposed to counter. There will be more than one slow-motion and all you have to do is watch them. That is one.
When Deathstroke is simply walking around, you can use your Batclaw to get him. You can also simply attack him. However if you do, pay attention when Deathstroke counters you so you stop hitting him.
Those were the two biggest difficulties I had with this fight. First that I didn't know I had to wait the slow motion during the "cinematic" sequences and when to stop beating Deathstroke.
