KSP isn't using DRM. You can copy the install folder wherever you want and you can launch the game without steam with the KSP.exe or KSP_x64.exe. You only need steam to get updates and download the game.
Safe your install
OPTION 1:

That's probably the easiest and safest way to keep your install (and mods) safe.

  • Navigate to the install folder (standard path: C:\Program Files\Steam\steamapps\common\Kerbal Space Program)
  • Copy the Kerbal Space Program Folder to any other location
  • Launch the game with the KSP.exe or KSP_x64.exe inside that folder

Optional:

You can create a shortcut to that .exe to start the game.
You can delete the install from steam to safe some space.

OPTION 2:

A little bit more tricky but you don't have to move the folder.

  • Go to your steam library and right click Kerbal Space Program
  • Click on Properties
  • Go to the Updates tab
  • Select Only update this game when I launch it and close that dialog

  • Navigate to the install folder (standard path: C:\Program Files\Steam\steamapps\common\Kerbal Space Program)

  • Create a shortcut for the KSP.exe or KSP_x64.exe and place that shortcut on your Desktop or Taskbar
  • Launch the game from that shortcut

IMPORTANT for Option 2
Don't launch steam or close it before you launch the game from the shortcut or else it gets updated. As the option says, it only prevents steam from updating KSP if you're just in the shop or play another game. If steam is running and you launch the game it will be updated. If that happens, read the next section "Revert to previous version".

OPTION 3:

For Option 3 you have to follow the same steps as in the next section "Revert to previous version". Just select the game version you want to stick at.
Revert to previous version
  • Go to your steam library and right click Kerbal Space Program
  • Click on Properties
  • Go to the Betas tab
  • Select the version you had installed before and close that dialog

  • Launch the game from steam
