I also should write some portfolio worthy code next month, the problem is time, topics, etc.

Java is a great programming language to start with.
C# is pretty similar to Java, so learning C# would be easy for you.
After that you could try to slide down the C-letter-Programming langauage hell (C++ and or C) or you try out Python. SQL and HTML is also a nice thing to know and with HTML you'd also learn some stuff about CSS and JavaScript. :3

Depends on what your coding goal is. Different programming languages are superior towards others in different fields. Python is perfect to script something very quick within minutes, document research, etc.

C# and Java gives you the freedom to not get forced to use malloc and alloc like in C.

For example I'm usually using:
Python: University Projects/homework, Discord Bots, Minigames, other quick coding stuff
Java: Minecraft Modding, Spring Boot Website Back-End
C#: Windows Forms, Twitch Bots, Minigames
HTML, CSS, JavaScript: Back-End ofc.
