I don't do it, but I don't see a problem with it.
The main issue for me would be 1) having the lettuce on hand (I usually don't keep it in the fridge), and 2) fitting the lettuce on a hotdog bun (along with everything else I'm putting on it) without it getting sloppy.
Otherwise, no problem.
I do sometimes wrap hotdogs up in warmed flour tortillas (with cheese/relish/condiments, etc), so including a leaf of lettuce (or some fresh spinach, which I'm more likely to have on hand) would probably work out okay.
