My old steam account suddendly got a phone number

And i'm pretty sure i didn't add a phone number to that account. Even my email said a phone number was added to that account. Great, now it's protected from it's original owner.

It sounds like your account was compromised. You will need to contact Steam support and provide proof of ownership:

Wouldn't hurt to consider how they got your account information, or around Steam Guard.

That email has a link that allows you to lock the account. Have you clicked it?

i tried to delete the phone number. but i need a code i don't have. good they didn't access to my email.

The email you received, it has a link to lock the Steam account. Have you locked the Steam account?

I got worried and just went straight to try to enter the account. and now. the email is gone.

Even if you delete the email, it's still probably in your trash bin/folder,
