You don't have to reincarnate to change subclass by the way, and you can max them all in the same reincarnation.
you dont need to reincarnate over and over again to give a unit every skill/evility that they could possibly get. infact, you dont need to reincarnate even once, however you wanna reincarnate atleast once with all subclasses maxed (yes, all, including dlc ones) to max out your base stats. after that, when leveling in the Elite 4 squad you max out your base stats naturally (but im assuming that you arent there, so forget about that for now)
you can get all evilitys by leveling the specific subclass. for unique units evilities you need to buy the evility on the unit in question, equipt it and do a char world run with them. then print the evility into a scroll (one of the copies at the end of the character world will let you do that) and let whoever you want to have that evility on read the scroll.
you can do the same for skills altho in the case of magic it might be faster to just use the skill squad to teach them terra elemental magic (with metallica as the leader, who learns all 3 terra elemental spells at level 40 or so, and a galaxy mage or sage or whatever for star)
