Hello, Tim. I see your point. If you have any other questions about game mechanics which you cannot answer by "trail and error" and studying in-game info feel free to ask them here. I will do my best to provide you with detailed answers. As of now, there is indeed no manual, so having those questions answered at least here would be advantageous both for you and for other players.
As for your current question: The mechanics involved with bombing an airfield are as follows:
1) Dealing damage to an Airfield building (do not confuse with Airstrip tiles) does equal damage to all aircraft landed on it at that time. (Eg. If you have 2 aircrafts landed on the Airfield, and an enemy bomber does 3 damage to the Airfield, then building AND both aircrafts suffer 3 damage each)
2) Damaged Airfield does not affect the refueling rate or planes which were in the sky before the bombardment. However, it does have some effects (see below)
3) When an aircraft is launched from a damaged (or destroyed) Airfield it receives a penalty which lasts until next landing. This penalty reduces all types of attack of this aircraft and its initiative. When the Airfield has 0 hp this penalty equals to -5 (to all attacks and initiative). This penalty is equally distributed: which means if your Airfield has 80% hp your Aircrafts will receive a -1 penalty, if your Airfield has 40% hp your Aricrafts will receive a -3 penalty etc.
This penalty is removed upon next landing. (So if you then take off again from a full health Airfield you do not have any penalty, otherwise same rules apply again).
As for AI bombing Airfield in the Battle of Britain scenario it is both for historical accuracy and has some mechanical merit as you can now see.
I hope that now this aspect of the game is clear. The question that is keeping me up the most at the moment is what exactly are the consequences of altering the difficulty of campaign? I tried and did not see any evident changes in the first turns of the first mission. (I am interested if a rerun on Marshal would be worth my time.)

You are correct: "airstrip tiles are purely cosmetic."
You can land and take off in radius 1 of the main Airport tile.
As for the difficulty there are two parameters which affect it: enemy units strength and prestige gain ratio. Now here is the list:
1.Lieutenant: 200% prestige gain*, enemy units have 8 strength
2.Colonel: 150% prestige gain*, enemy units have 10 strength
3.General: 100% prestige gain*, enemy units have 10 strength
4.Marshall: 100% prestige gain*, enemy units have 12 strength
* it does not affect prestige you gain for “on-the-map” objectives, only the reward for mission completion.
