Dark elf, mostly because of Morrowind
ha, dark elf very nice with CBBE)
Khajiit. I'm a Stealth type, at heart, in these sorts of games, so they're perfect for it - great skill bonuses and, most importantly, Eyes of Night (though it's nowhere near as important as in Oblivion for basic indoor navigation, it *does* make finding stuff in corners and on shelves a lot easier).
I havent tried them all yet... Played Dark Elf, Wood Elf, High Elf, Redguard, Kahjiit, Breton and now Imperial. So far it's been all good as I played each to the racial strengths and taking the profession that best suited each one as my main course of study. Mage for Dark Elf and High Elf, Thief for Kahjiit, ect. Eventually I'm going to take on the Nord race and plan on it being a Barbarian style heavy armored fighter with no magic skills at all.
Favorits so far have been the High Elf and Imperial because I was able to make them look very close to what I look like and really enjoyed that aspect.
@alliecienti what about brenton for mage? -- my personal fav with that MR.
my next race would be khajit or nord for my melee char. havent decide if i wanna go swords or 2 handers
Played the game as a Nord, Imperial, Orc, and now playing through as a Dark Elf. Like Alliecienti, I play to the races' strengths. By far, the most overpowered race I played was Orc. Playing as a sword and shield warrior, using Smithing and Enchanting. Nothing like having legendary gear with dual enchantments on everything. Got too easy, real quick.

I'm playing the Dark Elf as a Nightblade, and so far, it's challenging and fun and only at level 11. Can't wait to get to the higher levels.
I play a kajiit, just because of meeting J'Zargo in my first playthrough.

If you played the others to their strengths, you might as well do the same with the Nord and go for Two-Handed and Light Armor (dragons dying in 2 power attacks is fun! :P).
I go against the grain with my races. Orc Rogue, High Elf Warrior and a Nord Mage are my favorites. Makes it hard to level them at first but it gets easier after the primary perks.

I will do this when I go back to play a race I've already gone thru with. It does up the challenge when you go against the favored attributes and excell at it.
Even since Morrowind and Oblivion I played an argonian as may main-character. My nickname "Arukai" was the name of my argonian in Oblivion. :) In Morrowind, his name was Veezur and in Skyrim it is Gulan-Jee.
