I Think it could have a pretty good mix between the shop-keeping and dungeon parts.
It'd be pretty unique, as far animes go, IMO.
Though, some of the scenes just scream anime.

Probably just end up as an OVA or one-shot. On the other hand....far less compelling things have been made into 26 episode anime series.

I concur, though for a season worth of material that will be 13 episodes. 2 seasons would be 26 episodes, and that's quite a lot to do.

This would make a solid 13-episode series. The debt repayment time limit means the story has a clearly defined goal point, and it can thus close in a satisfying way. The story seems a little big with too many threads to just be an OVA, but not enough for an ongoing series.
