Aside from the balanced blade the Hattori's Katana is the most overpowered weapon in the game especially with predator. To me it felt like I went from paying attention to enemies when using balanced blade to only spamming the charge dash attack with the Katana without really paying attention to anything else. I beat the boss with ease with the Katana, I didnt even have to learn his attack patterns with that weapon.
I tell you this because that weapon sort of ruined the game for me a little bit personally and dont want that to happen to others but it is extremely fun at first which I think lent itself to me overusing it and making it hard to want to use other weapons.
Sure the game might get harder and that weapon wont feel as overpowered later on maybe but the weapon when compared to all other weapons is leagues above and although it may be less overpowered in harder difficulties as others have mentioned to me before, so will all other weapons along with it so that is a moot point.
I did a run on 5BC where I managed to beat all four bosses - Concierge, Time Keeper, Hand of the King, and the Alchemist - without taking a single hit in any fight. It is that good.
Aside from that, I'm usually more of a fan of specific weapons than full builds, since builds can vary based on the properties and affixes of items. One of my recent favorite weapons has been the Oven Axe, because it just feels so satisfying to smash into enemies' faces. I know a lot of people dislike the slowness of Survival, but it's always been the most fun class in my eyes. The only downside is that you have to get to at least 2BC before the Oven Knights whom drop the axe will begin appearing in the game.

Mutations: 1. Gastronomy 2. Soldier's Resistance 3. what you like, I like Recovery or Open Wounds
EZ 5BC runs. Almost nothing to reroll on weapons - slot 3 and 4 are the same all the time.
No great mechanical skill required - War Spear goes brrr with an excellent moveset. 1 swing of a Giantkiller = boss's damage cap with good stats. Very hard to die compared to other builds.
Blood Shield (or the shield that knocks enemies away if colorless)
Grapple
Teleport
Brutality Mutations: Open Wounds, Scheme, and maybe Slow Down (but I hate how it messes up my timing when trying to block).
Affix: Blood Drinker
With Scheme, you can Grapple, then Teleport, then attack for big damage! The Spartan Sandal will daze enemies, you can kick them 3 times... Or Grapple, Kick 3x, then Teleport, Kick 3x. Repeat.
Though this build is not recommended for when bombs or traps would be your best bet. Otherwise, it can be pretty devastating.
ETA: Snake Fangs against Conjunctivius is CRAZY! >:-D
I'm mostly playing Tactics:
W: Throwing knife, Marksman's bow
P: Lightspeed, Sinew slicer
M: Barbed tips, Tranquility, (the third varies)
This is a very versatile build, works well in almost all situations up to and including BC3. The notable exception is the Giant (where it totally fails), and in general it's not good for dealing high damage for an extended period of time in close quarters, so it's not really working in BC4 and BC5. This can be partly remedied by adding the Quick bow as a third weapon and rotate them as needed, and Point blank as the third mutation.
I also like the Heavy Crossbow, but in general I feel crossbows are too constraining - when they work, they work great (if you don't mind the two-pronged mechanic), but when they don't, you only have the powers as alternative.
When I play Brutality, the most fun is:
W: Impaler, Assassin's dagger
P: Powerful bomb, Ice grenade / Stun grenade / Swarm
M: Open wounds, Melee, Vengeance
I think this is a somewhat tacticsified melee build, with both weapons working best with a bit of timing. Excellent for crowd control in tight spaces. Not good against most bosses.
This method is pretty good on HoTK too, but you won't be able to abuse it.
I probably shouldn't say anything or the Devs will nerf it, or give Scarecrow a counterattack.
Using the Hunters Grenade (3bc+) and Soldier Resistance as survival, you just feel so tanky i love it.
This is the only way I got past 2BC to 4BC. Stuck on 4BC because I apparently can't move my guy correctly sometimes. :/
My first victory against the giant was with the balanced blade, but my first spoiler boss win was with Sadist Stiletto too lol.

Right now I tend to like any brutality build consisting of
1. A fast melee weapon (Rapier, Meat Skewer, Balanced Blade, Blood Sword, Stiletto, Assassin's dagger, katana, Oil sword, Hayabusa Boots, Shrapnel Axes, Impaler, Frantic Sword).
2. A ranged weapon (Hemorrage, Infantry Bow, Pyrotechnics, Throwing knife, or a gray/legendary Alchemic Carbine).
3. Either some bleeding/fire traps, or skills including Lacerating Aura, Knife Dance, Phaser, Smoke Bomb, Serenade (Because I like kawaii sword).
4. Depending on the items I have and their affixes, some of the mutations: Melee, Vengeance, Open Wounds, Velocity, No Mercy, Instinct of the Master of Arms. For the spoiler boss I like to use Emergency Triage. I haven't tested Disengagement but looks nice for that boss too.
5. Shields sometimes. I mean, I don't use shields often, and I didn't use shields at all until after my first spoiler boss win.
I mean, since the items you get are mostly random you'll be changing gear in a run so you better keep your mind open, unless you're playing on custom (My first 5BC runs were on custom so).
I am at bc2 currently and tried out lots of things until I got there!

Its a good weapon,but I don't use it quite often cause it uses 2-slots.
Got the tombstone already,but never tried it. Maybe I should do that.
Pyrotechnics op with Katana. You never use predator?
People only use hunters grenade to get full arsenal asap?
I generally use the following Mutations: Vengeance, Open Wounds, Gastronomy, Soldier's Res, Predator, Melee, Point Blank, Tranquility
Based on what build I have.
Melee used often: Twin Daggers, War Spear, Sandals, Wrenching Whip, Katana, Impaler
Ranged used often: Marksman, Infantry, Heavy Crossbow, Explosive Crossbow, Lightning Bolt, Fire Blast, Blowgun
I also need to learn a lot about synergy.
