Different models for special infected.
Almost all common infected look different from one another. I think their outfits along with their physical appearance are randomly generated from a list of parameters. Would it not be cool if the same were true for the Smoker, or the Hunter, or any other special infected?

Tank and Boomer have 2 versions, but yeah it would be nice, though they would need to be easily recognizable.

you can download different SI skin mods and change them up once in a while.

Tank only has two versions which depend on the map though ...

I think you can get different textures to play round robin with extensive scripting, but the SI have only one model file each. I don't think you can change those on the fly. If you can, it would probably require a lot of experience and not always work.
