Anything else can be obtained later. Every boss has their own preferred status effects to inflict on the player, so really, the fastest way to know what to put on is to fight the boss and discover it, then try again. But any accessories you find in the last dungeon of a chapter are a big clue about what status effects the boss is likely to use.
Like Stabbey said, if it says part of a set, it's missable. Other than that, the benefits of each accesory should be fairly obvious. You should begin with equiping accesories that resist more than one type of status. Then, you should spread them out a little bit so that, put together, at least one character resists most types of status. However, you should also prioritize more crippling statuses like faint over less crippling statuses like poison. Most stats aren't very important in comparison.....except speed......and maybe evade, accuracy, and crit.
