You should at least get 2 big toes at a minimum.
Honeyside is favorite vanilla house as its cheapish, easy to get, close access to best place to sell stuff and external entry point for being a vampire before DG(as npc's used to attack you) and to avoid vampire attacks in towns when DG released.
Same with Mammoths you only harvest the snoot for meat.
I could have left with like 100 pieces of meat minimum from such a hunt.
I mean if the snoot is edible rest of the meat is edible too right?

Mod only allows taking BOUNTY giants alive. I thought I had some extension for taking enemies alive in general, but nope: the mechanism was inbuilt to mod.

I seem to remember a portable Dwemer cube house for Oldrim that had a nasty "security" section you had to parkour through which included a vertical platform area with a rising lava lake.
Anybody else remember that one?
Also you should be able to harvest enough hides from one to be able to outfit the entire Imperial scout legions.
In your character's shoes, I would lean toward Proudspire, because it sounds like having the Bards' College next door would be up a scholar's alley.
I don't think I'll ever use Hjerim. After seeing what that place was USED for, I could never feel comfortable there.

Give your kid a Ritual Stone loaded Aetherium Crown for his/her birthday.
That oughta get them into full potential of Necromancy.
