Avoid placing items in chests that aren't yours as those respawn their content.

I placed some items in a chest in Morvunskar once, they disappeared when i came back

Or you could get MODS for Summonable Storage Chest, and or Dwemer Storage Cube.
its... complicated you can dump yourstuff in most any container.. but most stuff.. resets, like how mobs in an area respwn.
from what i was able to get out of ppl, the closest spot to the start thats 'safe' is the tiny cottage across from the stones. it has a hidden basement and the chests there are ok.

that said you should sell off most of the stuff and get some gold.

There are 9 homes you can own in the vanilla game. 8 of them you will need to purchase, and the 9th is awarded for completing a quest.
its a little hut. Anis's Cabin.
go to the 3 guardian stones, cross the river and its a bit to the right.
apparently the hut has a hidden basement with a some chests inside and these dont reset.
the earliest House you can Own is in Whiterun, but requires both a good chunk of gold, AND storyline quest that takes you though Bleak Falls Barrow.

And where (or when) can I get enchantments for my weapons? Do I need to buy them or something?
nornally first enchannted weapon (usally a axe) drops off the boss of bleak falls barrow.

as for USING enchantments..
1. to 'learn' an enchantment you have to break down an item that has said enchantment on it.
2. enchantments on weapons arn't permamant, they have a charge bar.
3. enchantments/recharging requires Soul Gems.
4. enchanting items (or breaking stuff down) requires a Enchanting Table. closest one is in Whiterun Keep- Dragonsreach, in the mage's study.
