as for which mods to start with, of course you will install SMAPI first.
My favorite mod us the Tractor mod, as you can farm and salvage faster on the tractor, but you can also take the tractor to the mines and be invincible while you quickly mine all the ores and loot. I never play with out it.
there are a couple of CHEAT mods that let you control time and give yourself stuff, so you might want those as well.
However , most will advise you to play thru your first run to completion with out mods, but just the tractor makes that so much easier. If you are aiming for Perfection and getting all the achievements in the game for the first time , then AVOID any mods that add craft-able items to the game, different crops or animals and cooking recipes. The reason is the game will add those items to the long list of things you need to craft/farm/produce/cook and sell to reach completion for achievements and perfection.
I use SO MANY mods now I will never reach Perfection again, lol.

I personally would recommend playing Beach Farm first, which highly encourages you to try out less farming intensive strategies such as Fishing, Ranching, Fish Ponds, or early Desert unlock. I am not a big fan of content mods due to how they alter the game, especially when 1.6 actually did add a lot.
Anyway... here are the mods I would use:
[Plugins]
- Content Patcher[www.nexusmods.com]: Essential plugin that can replace game data, such as animals' sprites.
- Generic Mod Config Menu[www.nexusmods.com] and GMCM Options[www.nexusmods.com]: Allow you to customize mod features without the need of editing config files.
[User Interface, Sound]
- Fast Animations[www.nexusmods.com]: Speeds up animation, but mostly adjusted for those that happen when time is paused. (Ex: Eating)
- More Pleasant Elevator Sound[www.nexusmods.com]: The default elevator sound is annoying. This mod made it much friendly to hear. Useful when farming ores, Dust Sprites and Void Spirit.
- UI Info Suite 2[www.nexusmods.com]: Provides helpful information such as Sprinkler range, reminder of daily info, untended animals, and much more.
- Community Center Helper[www.nexusmods.com]: Show information on each item on your bag, whether they can be shipped, or for Shipping Achievement. (Does not show which crops you still need to ship 15 of them)
- Experience Bars[www.nexusmods.com]: Gives you a better information on how much exp you need to reach next level. More useful for early game to utilize the benefit of leveling.
Water Graphics
- Dynamic Reflections[www.nexusmods.com]: Makes water reflection more beautiful.
- Visible Fish[www.nexusmods.com]: Makes water feels more lively.

There are many mods that change graphics and gameplay out in Nexus. They are subjective and few of them may not fully up to date. You do can try mods such as "Better Juminos", "Horse Overhaul", and "Stardew Valley Expanded". I will not cover those bcs I don't use them, as I explained.
Few complex mods such as The Love of Cooking, requires SpaceCore plugin. If you need extra help, I suggest you join Stardew Valley Official Discord.
