Edit: Saw a post on another thread and it seems like there may actually be a backup of your save files.
"Are the save files permanently deleted from the folder? Look for the %appdata% folder and look for the Stardew Valley files then go to Saves to check the save files. They should be labeled by the character name and a string of numbers.
If they're still there, you can go into the character folder and see 4 files: 2 character names and 2 Savegameinfo files.
Make a backup of the saves first before you mess with them tho.
Now, once you have a backup, delete the 2 files WITHOUT the _old.
Once done, rename the remaining files by removing the _old from the file name.
This will roll you back a day but you should be able to run the save file again.
I hope this works and you get your saves back!"

Yeah, the game has a backup to preserve saves when it corrupts. If everything works fine, you'll only lose a day of progress.

so you just delete the save and rename the old save the same as the save was.
you lose the day that crashed but you should be fine.
