After the game ends the final boss fight will be available in Arba, as well as a whole slew of new missions that will open up, the Grudge matches against all the bosses in the caves will be available (scaled up bosses) and a few optional bosses will be available to beat. You need to do these if you wish to get all accolades (and therefore all Steam achievements) unlocked.
Optionally, if you want to have your characters at level 99, you can now easily level with a crit heavy setup on Bianca and the Magnetic Necklace in the Arba City challenge and if you want to get full skill points on every character you can finish the game twice more to do just that (yes, they made it so that you need 3 playthroughs and around level 90-95 to get enough skill points to get every skill on every character).
Then there is the chance to get 999 of every monster type killed for that list, or at least 500, to get all the Minimedals from them. You can farm mini medals to get all the medal items and missing recepies for alchemy.
Or you can just say, welp, that story was nice, I'll call it quits.
