Removing weapon
I´am not a mod specialist, so I don´t know how to remove starting weapons on maps.

I want to remove some melee weapon, because I never used them. I deleted them from the firefightreloaded_pak.vpk, but still appears in the weapon selection on every start of a session.

I looking for hours now, I have no idea where to search.

You can probably use a command like "Ent_remove weapon_crowbar" and that should remove it from your inventory. You could also do that same command but with crowbar replaced with whatever the weapon name is.

I have to use sv_cheats for that and as I know, it disables the achivements.

It is possible to specify which weapons you assign to the keys,
for example by adding the command in config.cfg
bind "1" "use weapon_ar2"

Currently, there are no ways to remove weapons from the spawning loadout. I'll definitely consider adding that as a feature

why add a katana at all

because it's cool? even though it isn't practical it's cool?

I don´t see any reason for not using the katana, but I don´t need the rest actually.

I had the same problem with postal2. There is too much melee weapon, I had to drop them every time I picked up one.
But postal2 is not fast-action based as FR is.
I rather use my mouse srcoll to choose my weapon and scrolling trough weapons I don´t need are wasted seconds.

As of the upcoming ENDGAME beta update, there is now an option to spawn the player without melee weapons.
