your attacking a monster from a safe vantage point, and all it has to do is walk back where it started and instant heal.

Correct, that is how they made it work in this game. I don't think the devs really wanted people to kill monsters from extreme range.

if not from extreme range then why pistol, bow and crossbows.

The mage staffs can launch artillery really far too.
My theory is the devs got burned out on the game and some things like this were just the easy solution before they left the project.
