Important newbie tip, SIZE matters a LOT
I learned this late first time i played but the size of your character mattters a lot. It influence several things like carry weight, stamina regen, stamina usage, movement speed and knoback resistance. Check this chart for more details and create the character you think it's approprate for you.

I always just go the 180cm one or 184 is it. Anyways that one looks good without being "warcraft hero large"

a melee agile character is viable in this game? not talking assassins or rogue, think something like a warrior that use leather armor and hit hard with 2hand hit and run tactics

thing is the vocation called "assassin" is the hardest hitting melee oriented agile warrior you can be. Don't have to even use daggers or bows, you can just use a sword. Don't let the name of the vocation fool you, it is the strongest hitting melee class if you focus on leveling just assassin

Yeah they are called assassins. You can change your PC and PAWN though. Nothing is set in stone in this game once you do it. Except for increasing your internal level.

Warriors are no brainer. They hit hard and can take punishment. The only problem i have with assassins is how squishy they are.

Dagger/Shield gets access to the amazing combo of Wind harness and Showdown. a lot of people don't think about the "unintended" combos. Like Mystic Knight and Magic Archer getting Shield/Cane and Bow/Cane respectively either. they can all be really cool.

Like does each item have it's own weight or is it like dark souls and it's just equipment weight? How does it affect movement and mobility? I'm probably going to make an agile assassin and I'm wondering if it would be better to make a small and fast character or if encumbrance is important enough to warrant making a bigger character to not be at high encumbrance levels...

every item you pick up and carry has weight. Augments like leg strength and sinew can help a lot with carrying things. Carry weight is another good reason to have pawns around, extra hands to carry your load. Weight has a negative effect on your movement speed and stamina consumption- on the flip side though, it does help to weigh down enemies when grappling them.
