Edit - no way to change the Hz in the game so had to change my PC's display properties. Setting it at 60Hz allowed me to finish the game. At higher Hz, it's as though the gem is 'sticking' against a wooden peg - those small pins sticking out of the wood.
Way easier than changing the Hz of your monitor. And you can do it on the go. Run into the bug, turn off full screen in the game menu and the problem is solved.
