A splitter works the same way, you'll use the LO to pull and the HI to cruise, basically, although you also can use them to transition to the next gear. Trucks use so many gears since they are a lot heavier than a car or a bike. Bikes use a lot of gears since human muscles aren't all that powerful, even if you are an Olympic athlete.
No, actually, it doesn't - and you won't. The splitter is for intermediate gearing (ie. for transitions).
You'll use the splitter only if/when necessary to make the upshifts workable within your engine's peak torque range. If you don't need to split gears, you just won't.
You're conflating the gearbox's splitter with the range gearsets. Low-*range* gearset for moving off, high-range gearset for cruise (roughly speaking).

Generally speaking you're looking for the gearbox with the *lowest* final drive ratio. However it might not quite be that simple depending on how low the gearbox's output ratio happens to be. In general though, the lower the number for the 'final drive' value the faster you'll cruise at a given engine RPM.
Still isn't an answer to my main question though, which transmission in the game is capable of the highest speed? http://i.imgur.com/GbGvWG5.png this is what I mean, I am using the Eaton Fuller* 18 gear transmission with the built in retarder and a maximum speed of 124 on its 18th gear. Does this transmission have the highest speed possible or do I have to get a modded transmission to get the highest possible speed in game if the other transmissions can't reach 124 or higher?
We've given you all the information you need to figure this out for yourself. The vanilla 18 speed box has a final drive ratio of 3.25. Do you see lower ratio final drives in the gearbox list?
Well, maybe someone else will have a better answer for you from their own experiences. Top cruise isn't something I put any level of priority on when I'm choosing my driveline.
