Like the genre but I have played this one to death. What else is out there?

Really depends about what 'Like This' means to you.

Do you mean zombie games in general?
Do you mean a game where you can build?
Do you mean a voxel world where you can modify any part of the game world?
Do you mean games where you're on a strict time limit to defend against an inevitable threat?

All of these would net you different suggestions. So, What do you like about this game that you'd like to see in another game in order to try it?

Shurenai is right, the way you wrote your post I thought, to the least, that the "zombie genre" was required. If that's what you're searching for there's literally hundereds of games with those tags.

Use your fingers and start searching Steam: they've improved the search engine a lot in the last year or so.

It gets me when people compare Project Zomboid to 7DTD. Am I the only person who thinks they're completely different?
How about Minecraft and Empyrion Galactic Survival as (like 7DTD) they're both voxel games? There are Minecraft mods that turn it into the most hardcore survival experience. Empryion is a space survival sandbox game and is highly replayable.

There are Valheim and Conan: Exiles. Both are very popular miney buildy multiplayer games.

There's also ARK: Survival Evolved which a lot of people like but it's so janky and has such godawful combat that I kinda can't stand it, even though it lets you ride dinosaurs which is the dream.
The other "big title" much like this is Conan: Exiles. But it requires an even beefier computer to run well.

And it's also more grimdark fantasy rather than modern post-apoc.

I tried Zomboid and ...oooof... not for me.

I liked the look of state of Decay 2 that Jost shared there, never heard of that. Given the time I have these days though, I'm sticking to 7D2D and the few other games I play in my downtime.

Nice suggestions either way, in a different life I'd happily dive into that SoD2 game.
There's a ton of games that are 'sort of' similar to 7d2d. I feel like 7d2d kind of stands out from the crowd cuz it has it all more or less. But, here's some more recommendations for survival / crafting / building / exploration type games;

Rising World
Subsistence
Novus Inceptio
Planet Nomads
Planet Explorers
etc.
No Mans Sky
Stranded Deep
etc.
I have a bunch of them. However, it should be noted with some of these I mentioned... they're either incomplete or been dropped from development... like Planet Explorers for example. While they may have been dropped from development, they still have quite playable content so, maybe only pick them up in a great sale deal. I shoot for 70%+ discounts myself. Two of note are Subsistence--still actively developed--and Rising World. Both have good devs that are constantly working on them.
