Is there a way to set 7 Days to Die to NOT update? Say if someone wanted to continue playing on A19 and NOT update to A20?
The "lowest" option I see is "Update when I launch the game" is there no "Don't update" option?

Go into your download section and uncheck the box that says keep game up to date.
The only thing i can think of is to Opt in to a specific alpha under properties like the current one when A20 goes live. I don't see a "do not update" button either.

That may have to be the answer.

Actually, you can keep it from updating without having to opt into a previous beta. Since currently A19.6 isn't considered a beta......until A20 comes out......you can select 7d2d in your library and click the gear icon (manage) on right side, select properties and the properties window comes up. Now select 'updates' and choose the options from drop down menu for 'Only update the game when I launch it' and 'Never allow background downloads.'
This way it only triggers to update it when you launch it but, since you'll be in-game playing, it forces the updating to be a background process which you just set to not allow.
This will keep 19.6 from updating to A20. But, you should still go in and 'opt-in' to beta '19.6' once A20 does come out just as an additional safety net to keep it from updating.
