Did you check out the Options menu at all? The controls can be remapped to whatever you feel comfortable with. You can even turn on/off the up+attack=spears and down+jump=roll thing in the Settings (those were intended for people who prefer a 2-button control scheme like an NES gamepad), as well as change how the Zoom works. Everyone is going to have their own tastes and thoughts on what is "intuitive", that's why, in my opinion, all games should allow you to re-map your controls, and fortunately this game does.
Well the whole system is based on Super Ghouls N' Ghosts, which had you lose ALL upgrades when you were hit, which means potentially losing 4 upgrades in a single hit. This game at least lets you keep your shield when you get hit with a helmet on. Also, in SG&G, once you were hit the next few chests would contain traps instead of upgrades, making it that much harder to recover, whereas this game the chests never contain traps.
Taking damage from being grazed in the foot has always been a goofy aspect of video games, and still happens in most modern games as well, so not particularly unusual... as for your foot hurting enemies, this isn't a Mario-style game, your sword is what you kill enemies with not your boots.

Short answer: Because the point isn't to prove you can reach the boss, the point is to prove you can reach the boss with all your gear still in-tact, making the boss easy. Also because, again, that's how Super Ghouls N' Ghosts did checkpoints and that's what this game is mostly modeled after.
That's why all the marketing for the game talks about it being a TRUE retro game, and not just retro "style", but based directly on how those old games actually played ("Nintendo Hard"). This game wasn't meant to appeal to everyone, its a niche title targeting a very specific group of players that like this kind of thing, and tries to be as up front as possible about what kind of game it is. What you call "retro problems" are what this game's target demographic would call "selling points."
I'm sorry it turned out not to suit your tastes - I'd suggest a refund but since it was free, I guess the best I can say is, maybe give it more time and you may eventually find new appreciation for old mechanics (though definitely poke through the Options menu and re-map your controls to what feels natural to you!), or just ignore it and move on to games you do like.
This isn't the sort of game where if die you've wasted your time, it's all about learning, finding, and perfecting a path through the levels by playing (and dying) over and over until you have them down to a science.
The joy in this sort of game comes from that learning process. The game is almost like a puzzle where each screen and enemy encounter has to be figured out and analyzed.
For reference, it took a ton of deaths for me to figure out even the first half of the first level, but once I did I can do it quickly and repeatably pretty much every time now without even getting hit.
I really recommend trying the game again with a different mindset, games like this can be frustrating at times, but also uniquely rewarding once you get that flow down and smash a level to pieces.

as for the items... i find myself thinking its not worth it to go down that lader, just to open that chest... just to get an item. i just have to play the whole level without taking a hit anyways, so i might as well run right past everything...

I've played it the hardcore way, but I forgot there was a way to cheese your way through the game before I saw my brother playing it and using the zoom out button every 15 seconds.
Which I never used even once.
