Yup, subtitles are only visible on the Song Selection screen. Players have told me they have multiple versions of the same song, so the subtitles will allow them to call them out easier. But of course you can use them any way you want.
There's no way to change the difficulty of a level in Auto-Gen Mode. The song itself dictates how easy or hard the level is. That way anyone can take the same song and play the same level.
XML is the type of file that is created when you make a custom level using the Editor. It's basically a fancy text file that holds all the information for how a level should play out. You're able to edit this file using a text editor and change additional settings not found in the game's Editor.
