Also, was there every any plans for quality or the random stats generation to also affect bullets? So that you could possibly make ammo that is stronger/weaker than average?
Nope, crafting ammo will be kept simple, damage strength is dependent on the craft of the gun itself. Eventually you will be able to use higher tier crafting to steer toward specific stats you want to achieve on that weapon though.

Us sharing what's being worked on right now is just that, it's not gonna change the order we have to develop things in. This is just something for fun, something people can see. As we explained in our pinned post on Multiplayer, there were reasons for the delays that were beyond our control, along with decisions we had to make to be able to keep working on the game.
No, the ammo crafting is very straightforward, ammo won't carry any stats. Guns themselves do, and that's where you get your chance for higher damage.
You gain more than one ammo per craft, we have it set to 10 right now, if I recall correctly. :)
Lighting is not only done with plasma torches, they were just a cheap way to provide light for the time being. Ammo will also be available in a variety of ways aside from crafting, including drops from enemies, ammo stations, and finding it. We have no intention to let it become a "game stopper," but nor can we leave infinite ammo permanently :P
If they make mining faster or add enhanced laser mining tools then crafting ammo shouldn't be too tedious.
For things i can read ... mining faster is only for people with the "collector edition" of this game ... (at last at the moment=
