Engraved Gauntlets and spells?

Can't really find a concrete answer; I know they work with weapon attacks, but do they truly work with spells too?

It works will all type of attacks, as i know.

Yes it can work with spells bows and throwing knifes too.

If you take a multi hit weapon like a twinblade / ricard rapier R2 or spells like Soul Barrage / Shower does each independent hit have a chance to crit or just the whole animation.

Engraved Gauntlets will give ANY attack you make (be it item, spell, melee) a chance to crit (I believe its 5%). Heck, if I'm not mistaken the wiki claims that the critical can trigger when landing a parry (not the ripose but when you deflect the opponents weapon) but since parrying itself doesnt do damage (the ripose does the damage) there is no increase to damage.
