Uh, what do you mean? Doom uses mus which is a modified midi which are pretty much the same thing.

Mus by default plays to OPL2/OPL3 which is borderline Adlib and not General MIDI at all.
General MIDI uses a wave table synthesis.

I'm actually going to add General MIDI music to PrBoom this weekend on the Doom Shareware Installer for Windows x64:

I was going to do it earlier but I had other stuff that took priority.

The method involves setting up TiMIDIty and using EAW patch sets if you're keen to Google that and PrBoom and not wait though... they're 36.4 MB once extracted.
