I'd strongly suggest you to try some of the currently available aircraft, but I guess in the end I only fly the ones I'm interested in as well. As far as 4th gen fighters go, a few are in production at the moment. M-2000C is slated for a december beta release, and at least F-14, F/A-18C and F/A-18E are being produced with unknown ETA.

That is actually quite modern considering what planes are in service today. Newer variants/derivatives get built, the ones already in service get refurbished and upgraded and so on. The airframes haven't really become obsolete over the years, it's the weapons and avionics that have needed upgrades. Aircraft don't necessarily get phased out because they're obsolete but because of metal fatigue.
As for the late 90s / early 2000 designs, they're very unlikely to make it to DCS due to the data availability thing. I'm surprised the Super Hornet is being made. All in all you could say that stuff based on real data makes for a much more fun simming experience than something half-built upon guesswork.
With that said, the early 4th gen fighters sound like a good thing for DCS, and I definitely want more Vietnam-era jets to challenge the MiG-21bis (which is hands down the best DCS module right now imho).
Yep. Even when there's people working on a module, it will take several years to produce simulation of modern aircraft: they are so complex to produce in DCS level of detail and accuracy.
Various developers have hands full at the moment and getting information on some aircraft (like the super hornet) is just too difficult to produce accurate module. In some cases there is a mil-spec project before actual consumer-level project (A-10C was such a case, Eurofighter Typhoon is in similar situation).
