And they all pretty greedy, except for the Hillbilly. The knight is more of a liar than a sloth.
Frankly, nobody commits gluttony and most of them have more than one sin, pride, enjoy, wrath or greed.
But you're not the first person to try to make this connection and you chose the same.
Why does everybody assume the Knight is lazy? He was a peasant working hard in a field, he probably worked harder than anybody here! Sure he "took a shortcut", but that isn't sloth, there was no other way he could have become a knight!
The game was supposed to have more characters and it's likely to get more through DLC, if they left it at seven it's probably because one of Ron's first game has seven characters too.
Gluttony does not apply exclusively to food, but also over-indulgence, over-consumption or any kind of selfishness. The Twins seemed to have lived a very over-indulgent and spoiled life, and yet it wasn't good enough for them.
I think it's also that as a knight, he did nothing. The cave paintings show he saw people in trouble and did not help them. Some people consider THIS the true meaning behind the sloth sin: doing nothing when you could have done good.
I don't think that the sins are clear cut and obvious, but I think there is some merit to the theory. It would make sense that there are 7 characters in a game where you play as 3 at a time.
Frankly, I think they all committed the 7 Deadly Sins in someway or another, whether through the gameplay or their story.
They lust for their object of desire and are greedy enough to become wrathful and kill or maim others for their purposes, they cheat, which could be considered sloth. The fell no guilt, so you could claim they feel pride for their actions and I'm sure they envied those who had want they wanted.
Seriously, you could easily claim the Monk is the sloth one since he didn't want to train more, or that the Hillbilly is a sloth since he resorts to violence and gives up instead of trying harder.
You could claim the Scientist was lazy since she took the sold out instead or working harder... You can see where I'm going, right?
And yeah, you can easily make the claim that the Time Traveller was prideful or the Hillbilly showed his true wrath with fire, I'm aware of that (which is why I said they weren't obvious, if it is all true). We might be entirely barking up the wrong tree, but I feel it warrants more discussion or possible investigation.

The scientist could possibly be Bernard's mom! And the Hillbilly is such a Jeff! XD
Dave could be the knight?
