Pyromancer, despite the name, is less well tune for doing fire damage than Sorceror. It does, however, make up for it with chaos and vitality as well as higer attack speed from Solael's Witchfire and Possession. In some situations, it's good to be able to do multiple types of damage. Also, Pyromancers have debuffs that can slow down enemies and make them more susceptible to all damage. This might be enough to make up for lack of raw damage compare to Sorceror.
Commando have the best passive survivability (highest health and physique) and skills that buff physical damage. It's less flashy than the other two but is also solid in its own way.
So, all three are good and you should consider what you want.
Basically the main thing sorc has is the panic button from mirrior of eroctes and next to infinte energy with iskandras. Pyromancer doesn't really have any panic buttons but I find is really just tankier in general although I do have to chug an energy potion from time to time.
I wouldn't stress too much over it though, both play extremely simililarly. I just prefer pyromancer for the tankiness and its slightly less braindead since theres 1 or 2 more good active combat skills to take.
They both have their own synergies. Brimstone in the Demo tree adds flat chaos damage and occultist has some good stuff in that department. Arcanist has the Iskandra's line to buff up your elemental damage you get from the firestrike line in demo. Possession is basically a Maiven's Sphere that gives less damage absorption but boosts your damage instead of reducing it like maiven's. Personally the only things I took in Arcanist on my sorceror were the Mirror for the panic button, maiven's, inner focus and the iskandras line. Flash Freeze is kind of moot when every single enemy in a mob except for bosses and heroes dies to a single auto attack.
Again its largely personal preference. Both are basically going to play the same where you left click a couple times and everything in front of you just explodes into puddles of blood.
Since I already had a sorcerer, I went with your suggestion. Plus, I thought the name "Pyromancer" fitted better for a dual pistol class.
