At this time that isn't something you can do in the game. On the Don't Starve WIki there is a piece of fan made art that shows Wilson riding a beefalo but you can not actually do this.

Hounds can not be domesticated. You can use a bird trap and a bird cage to have a pet bird which can be fed fruits/veggies to produce seeds. You can give meat to pigs and they will follow you around and fight for you. You can kill the Spider Queen to get the Spiderhat and spiders will fight for you while wearing it (it runs out). You can steal a tallbird egg and hatch it into a smallbird which will follow you around.
