I didn't even know that variable existed, will edit. Good catch.
If there is no file called "crash.txt", chances are you have not crashed yet, or the game fails to write it for whatever reason.
Try uploading your most recent crash dump to a site like MediaFire or MEGA. Your crash dumps can be found in Steam/SteamApps/common/PAYDAY 2. Their file names end with .mdmp.

Here's mine every time I try to play Golden Grin, crashing either while loading or in the in-game lobby at joining 98% or a few seconds after that.
The post right above yours clearly says:
Pretty much every piece of that callstack looks to be graphics related. You're probably forcing some options in the control panel it doesn't like or you're running an old graphics driver or potentially more than one graphics card driver.
