Skilling guides?
Are there any for almost any skill? Usually the ones I find only mention Ninja or Mage or something else specific.

When you rebirth, you can choose a new talent with talent-specific skills you want to rank. For example, your character's current talent is Ninja; when you rebirth again, you can work towards mastering a new talent - like Magic, or you can select the talent you are currently working on. Mastering talents and skills can permanently boost your stats[wiki.mabinogiworld.com]. In addition to rebirthing, playing the generations will teach you talents that you can't get by rebirthing (such as Paladin or Dark Knight, Demigod, and Divinity). Be sure to check the wiki[wiki.mabinogiworld.com] to learn how to obtain new skills and how to rank them.

I meant more like best places to skill level said skills. Wiki doesn't give suggested areas to level places if you are just grinding for one skill, etc.

For none CP skills you can train them anywhere, just find a group of weak enemies you can farm. For CP skills one of the best places to level them is in the shadow mission Another Alchemist in Tara because the golems have a high CP level while still having low enough health to farm in 1 or a hand full of hits.

CP skills are any skill that needs you hunt enemies of the right level. For example "Kill Boss level enemies".

Normally I advised new players to work on CP influenced skills (things like Windmill) first that way they wouldn't be playing guessing games to figure out proper CP targets later. Waiting too long could mean you'd need -CP gear, such as things with the Raccoon Cub enchant or Abyss (was this the shield one?) to lessen the headache.

When I would train skills I normally used Sulfur Spider, especially for many skills that required hitting a certain minimum number of enemies. I'd hop in and out of the first room of that mission due to the abundance of enemies in that room.

I guess that depends on what skill you're trying to rank. I see a lot of people (including myself) using Tendering Potions on foxes in Tir Chonaill and raccoons in Dugald Aisle, among other places. I personally love training on the zombies in Tir Na Nog (another world). In addition, try training in dungeons and shadow missions as suggested in the other comments.

How do I acquire -CP gear anyway? Is it an enhancement?

The link in that post will take you to the wiki. In that page of the wiki is a section for "Preventing and Reversing CP growth" which contains the info you want.

Mabi is a large, deep, and none hand holding type of mmo, thus the community encourages and actively promotes using/learning the wiki.

Enchants, but applying them can be a pain since they usually involve stepping. Raccoon Cub outfits used to be a thing in the gachas and if you were really lucky you could find them on gacha accessories (which are otherwise impossible to make). A Raccoon Cub temporarily drops CP by 1000.

On a side note, a cheap-CP item for training archery is to find a Broken Arrow enchanted crossbow, which cuts CP down by 250. A few other CP enchants would be Abysmal, (shields), Vicious (footwear), and Thin (headgear).
