In what way is the interface troubling you? In that it seems upside down compared to Tab? I can see how that might be annoying; but if you think about it the Rocksmith layout is the more intuitive...
I've only been playing 50 hours in about two months so far. I think I see improvement. I've certainly progressed through a couple of rocksmith levels, but I'm not sure it that means anything other than playing time.
Plus, if you are really used to reading tablature, you can always invert the string setup on the screen. I found that actually helped since I'm more used to that setup.

Sarcasm apart, TLBA does have a point. Rocksmith is for absolute beginners, for people who don't even know how to hold a guitar / bass properly. Not for seasoned veterans.
Put John Petrucci to play Rocksmith and he'll probably punch the TV across the street in a few minutes :/
This game has potential but it also falls short as it is right now. The interface itself is not very user friendly at all. How many screens should we have to go thru just to exit the game? Choosing a song is a mess. In fact access to every single feature in this game is a pain.
The game has problems detecting notes. It has problems with latency. The songs library is weak. The price of adding new songs is ridiculous at $3 per song. I don't really find the helicopter view of notes going by to be very helpful at learning either. When it's coming straight on it works because you can clearly see on what fret notes are to be played. But when it goes to that stupid helicopter view it's just garbage.
The ever moving goal posts style of learning works well in the very beginning stage of learning a song but after you advance in skill it gets old. You learn a lick and then the next thing you know they change it all and you have to memorize the same exact song a different way. It's like a one step forward 2 steps backwards approach.
But then at the end of the day with all it's faults there is nothing else out there like it. It has potential to be something awesome. All they need to do is clean up the interface so it's more intuitive and easier to navigate. Increase the music library substantially. Ask a more reasonable price for DLC songs. Polish the note presentation up a little bit so it's more visually clear where notes and frets are. Do that stuff in the 2014 version it the game is going to be 100 times better at teaching guitar.
As I understand it you can change a setting to keep the highest level acheived, but so far I'm just letting it run the default way. For technique I had to learn from friends, read books and guitar magazines. These days you can watch videos like the guy Justin on youtube. I think if you followed his lessons plus played rocksmith you could develop pretty fast.
As far as changing the riffs on you, you could always go into riff repeater and then set the mastery to 100%. Then you can see and try to play it all. For me, the progressive difficulty seems to work about right.
I am a pure beginner, so I couldn't speak to someone with a lot of experience, but even with your own developed style, you still have to hit the notes and shouldn't have any lag problems on a decent system. I also think that this is an amazing idea and has increased my learning tremendously. Sometimes I'll pause, write the tabs out and then practice a section with an amp until I can nail a section. I'm honestly not sure what they could come out with in 2014 to make me want to upgrade, but I'm still working my way though this one, so maybe in another year I'll be ready for something else!
I'm brand new to bass, and have no problem with the user-interface. It is far more intuitive than tablature, and anyone familiar with games such as Rockband or Guitar Hero will be aware of how it works.
