There was someone posting here who tried playing through as Hellenic, I don't recall who it was. He wasn't thrilled, since Hellenic has nothing special going for it. It is pagan, but it can't be reformed. There is no head of the church, but you can have female temple owners. You have the basic county conquest and de jure subjugation of pagan and also concubinage, but I don't think you can do holy wars. It also appears that you won't get the pagan advantage of no prestige loss for vassal levies.
I think someone tried basic generic pagan as well, using them for the Irish. Same disadvantages with not many advantages.
Aztecs, the other hand, have a fully formed religion. You can reform it. You get all of the standard pagan perks: concubinage, prestige loss while at peace until reformed, no penalty for vassal levies, county conquest and also tribal invasion (like Tengri, except no subjugation), once reformed you get holy wars and great holy wars and in both reformed and unreformed you get a +30% levy size (sort of like Norse, but they only get that when reformed). For a cultural rertinue, Aztecs get Jaguar Warriors (50% light infantry, 50% heavy infantry and 30% offensive for each).
Neither generic pagan nor Hellenic get cultural retinue troops, but that doesn't really matter since anyone not English/Welsh for longbows, Scottish for pikes or Greek for Cataphracts is better off using a generic 1:1 skirmish/defense + 1 defense unit over their cultural retinues anyway. (Always keep 1:1 + 1... so don't start a retinue stack until you can afford to get 2 pike units and 1 archer unit and don't add another archer retinue unit unless you can also add a pike retinue unit at the same time.)
If you create a random character in Ireland or something and grow, you can just use their invasion CB left and right - As soon as you can take on a realm, you can take it over.
It does have some of it's own mechanics but one thing I found weird was that they couldn't raid so they had to declare wars to avoid the "At peace too long" penalty. Perhaps that's a game mechanic to make the AI more agressive... :P.
