The "Definitive Edition" doesn't really add that much other than some "enhanced graphics" and the DLC that you can buy for the normal version for much less. Even if they released the version for the PC, most people wouldn't be willing to drop another $60 for a game they already played and can get for a LOT less online or during a Steam sale...
It's just a way to get people with a shiny new XboxOne or PS4 to fork over big bucks for last year's game...
The graphics are less than that of the PC (still), but they did change Lara's appearance to a more clean version of her. What I mean by that is that she's less muddy and her face model looks like a Barbie doll (botox). Many people agreed on that and Square Enix seems to have realized it goes against their whole "vulnerable, realistic Lara" aspect of the game.

^ That's a comparison of the two faces and the new Lara has pinker lips, bigger eyes and just a less-pale face overall.
