Need to fight Simon again.

I’ve finally defeated Simon, but after playing for a while, I feel like fighting other bosses isn’t as fun. Is there any way to fight Simon again?

NG+. Or reload an older save, if you have one.

I can't find the save file from the fight with Simon, because after I fought him, I went on to fight Clea and did Gestral quest.

Do you check all 30 save files. It looks like only 3 at first but you can scroll down.
Otherwise NG+ is an option where he has double HP.

For future seekers who stumble across this thread from a search engine, you can click on the glowing sword where Simon was sitting to fight him again.

I believe after defeating Simon there is some leftover of him - if you interact with them you can get info, that this is his chroma and do you want to fight him again. This was in NG+. although I suppose in normaln game it will be the same.
