The first Summer is a bit tricky because eventually your well runs dry but you can stall making progress on the Coven Quest line to prevent it getting to that point or cast rain spells to water your crops if it does.
The typical drill for me is on the day I've harvested all my crops and flowers I take the incantation to the High Priestess and change the season. This season change occurs immediately and one can plant the new crops before going to bed. Of course, first year, you won't be able to buy seeds until the next day the General Store is open or flower seeds until Violet's Shop is open. Seeds become available year round after you've built a Greenhouse (Winter, Year 1).
