Way too many interceptions
I play on Face of the franchise as a QB and my receivers are incompetent dumpsters meanwhile their defenders are all faster and top tier players, is it really the lazy way EA is going to make it "challenging"?
Because it's just annoying and unfair, I can throw a perfect pass at the right time and a defender will make a jump of the year to intercept it no matter who he is.
It's my first Madden since 2011 and the way I see it it'll probably be my last.

When I play practices the interceptions are not as bad, is it standard on Face of the franchise??

Have you adjusted the franchise settings? The defaults are all at 50 and I find the defense has too many interceptions at 50. However, you can adjust it and lower it a bit. I wouldn't drop it too much as it will create bad throwing habits.

I did adjust CPU interceptions to 10 and it was the same result, I feel like these skill bars are fake tbh, I adjusted a few bars and after 2 games I didn't see anything different.

I realise i'm not the best at Madden since I haven't played in years but it's really frustrating especially because the difficulty is on Pro, I can't even imagine on All-Pro and beyond.
The game has "coached" me into throwing a lot of curls, crossers, screens and occasional slants. Go routes are like finding unicorns and square ins take a little too long to develop and get covered up quick, I'm finding. TLDR: Run Stick
I find that you have to run the ball. If you see the defense adjust then call an audible. Receivers will be wide open (pro difficulty). But you are correct, CPU defenders make unrealistic read & reacts to the ball from distances that seem implausible.
It just comes down to making better reads. There's no such thing as a 50/50 ball in this game, so don't throw one., it'll get intercepted every time. It takes time to learn what balls you can throw and not throw. I know I'm at the point I don't throw many at all. Get yourself into practice mode and get used to running your offense and making reads out of it, when you throw an int, watch the replay and see why.

The more you play, the easier it will get. I hadn't played Madden for years and then bought '21 last year on sale. Similar to you, I was throwing interceptions left and right and Pro was beating me up. Sticking with it, I got used to it. Learn how to use the low and high throws and also how to tell your receivers which catch to attempt. You'll be there in no time.
