theres a saturation setting in game im pretty sure and theres 'allow HDR support' option as well

Hmm... Try toggling "Allow HDR support" and see if that helps?

You can kind of do that now, just click/hold LMB while on the main menu (or go to the Credits). You can also load up the structure editor, load a structure, then press Spacebar to test out destruction on a single structure.

As for a destruction game where you don't have to use a vehicle, that's an idea I'm considering for a future project.
