I'm using the starter greatsword that my soldier has, it should be hitting at least sometimes.
Some things to look at; How many points do you have in 2H weapons? The more the better. What is the AT / PA setting at over to the right of the 2H weapons?
Hitting a target is determined by you AT (attack) score vs the targets PA (parry) score. To increase your chance of hitting you need to increase the points you've put into your chosen weapon (basically how well you can use it) and make sure the AT / PA setting at the end of that line is weighted to the AT side, the higher it is the better your chance to hit the target, but raising it means lowering the parry rating which means the better HE has of hitting you too.
I generally don't change mine from the default settings and if I do I only raise the AT setting by 1 to increase my chance to hit without totally leaving my self defenseless.
I left all of them as the standard on the soldier class. I put a few points into 2 handed and I'm hitting more now, however lockpicking doesn't work. I can't upgrade the skill, it doesn't even have a number.
I put the hair pins in my hotbar but can't click them. I am able to heal the same way using bandages though.
Lockpicking; Easy answer is YOU CAN'T. You're a fighter, not a rogue. If across from a skill / talent is ' - ' that means you can't do it. Can learn it later maybe if the option presents itself, but for now Nope! Don't remember as I wasn't looking but you probably have ' - ' across from plants, maybe animals etc.... No one character can do everything. The game concept is very much based on early RPG's, you need a balanced party, which you'll get as the game goes on.
Can't pick locks or pockets with your fighter? Wait til you get a thief in the group. Can't heal? Wait til you get a medic in the group etc....
You can heal because you have a starting number in the heal talent as a soldier would; battlefield medicine and all that.
I don't know if you have any experience with pen & paper D&D, but if you do you need to start thinking in those terms and you'll find the game mechanic's will fall into place.
I haven't got any experience with D&D, and I haven't really played an RPG game this advanced. I restarted as a burglar last night and I seem to be getting on better than I did as a soldier. Thanks very much for the help.

It's a lot more than just a walkthough as it has sections on your companions, combat, items you'll find etc..... Since none of the quest givers are marked, I found it useful to make sure I've done all the quests in an area prior to leaving.
Reading the game manual would be good too.
It is one of the more advanced one's. It seems the Germans after seeing D&D decided that it was 'nice', but they could really jazz it up and make it very nit picky. You have ALOT of control over your character and the companions you'll get.
One thing to remember just because you pick X class, doesn't mean that's all they can do. How you spend the leveling points you get is up to you so while your burglar is kind of a weak fighter right now, nothing says that farther along he can't be a 2H sword swinging monster.
When in doubt, ask questions.
And make sure you're saying ALOT like prior to leaving an area to move to another etc... etc.... etc.... The mantra here is save, save again and then save one more time.
There is an in game bug that can corrupt your main save file the longer you play, usually happens towards chapter 8 or so, but it's best to get into the habit now.
As far as changing from a soldier to a burglar. I've played through the entire game already, but currently have 3 'test' characters running around the starter area looking at different classes / builds. Play around at the start and see what you're comfortable with.
