Can you have Jaheira and Minthara in your party at the same time?
I didn't even know Jaheira was a recruitable character, and totally expected her to attack me when I sided with Marcus. IDK what she thinks, but I was going for Minthara the entire time. Will J stay when I recruit M later?

I don't know if she'll join you later when you sided with Marcus (Doubt it) but yes.

You can have Minthara and Jaheira at the same time why do they weirdly sound like they rhyme?.

Yes, entirely possible and the two will be fine alongside one another. Both have dialogue concerning the other.
