There are great examples like Death Cell continuously improving after release but the game is bug free and rock solid.
From what I have seen there are still features missing in timberborn as well as bugs and that's my deal breaker.
Then maybe it's time to update the STORE PAGE to say 'We are almost done and will have a complete product in approximately 6 months'

There was a major change in game mechanics recently, that had a fundamental effect on the game and how it works. I could imagine that they think about to fix all conceptual issues regarding the game mechanics that might have been in the game from the beginning but now it's clear that it should be changed before leaving EA. They have changed the storage system and you'll find many discussions on that matter here in the forum. Maybe there are big changes coming down the road in other parts of the game, too. Maybe how water works, I think they didn't touch it since day one and that could also be a major change in game mechanics that should be done during EA.

Should store pages have accurate information on the product for sale? Or should sellers be able to leave up outdated, incorrect information?
I've just re-read it, and there doesn't seem to be any outdated or incorrect information in the Early Access 'questions-and-answers' text.
If you believe there are, quote them.
Also, the response given is outdated now. The original answer of 'at least a year' provides no actual information since the game's Early Access period has lasted beyond this original response. Previous customers who purchased already now have no idea what to expect, and new customers seeing 'will be in early access for at least a year' have no way of knowing if that's newly updated information, or information that was provided at the beginning of Early Access (which it was)
