It'd bee awsome if some1 made a StarWars Jedi/Sith based class pack
The pack could have classes of the famous jedis and sith, could add lightsaber weapons and jedi based skills the 2 handed lightsaber could be darth mauls lightsaber

That would be awesome, but you'd need to find someone with a lot of modelling talent and a lot of free time.

I was thinking I'd like to see a ww2 total conversion. have like medic, sniper, demo, and assault classes.

The problem is the amount of work in creating something like that. GUTS gives us the tools, but for your star wars idea, someone would have to model and animate the characters and weapons, as well as any particle effects that went along with them.

There is already a mod that adds lightsabers (or it is still in working, don't remember)

A fair amount of stuff has been created but it's still in the early stages. This guy is pretty busy i think so progress is slow
