Why is it taking so long for games to be released from greenlight
Only 14 greenlight games released so far and 42 others that have been greenlid waiting to be released. It seems forever for games to be released via this way. Dragons liar was greenlid in november and still no sign of it being released.

Because it takes time to make a game and Steam does not publish games in beta stage.

I played FTL on steam when it was in beta. (backed it on kickstarter)

Exceptions confirm the rule

Does seem like you'd get a much more definitive answer checking with those 42 devs themselves rather than asking us to speculate. Maybe when you've found out, you could come share the information here.

Right, Steam publishes games in Alpha stage! (see Towns)

And that is probably what they are trying to avoid and probably 42 other reasons

1. Some games are not quite finished.
2. It take some time to integrate Steam API into game.

Because thankfully most developers don't try to sell Alpha/Beta Versions, just because they got greenlit (like i.e. Towns did and does...)

Theres also negotiations over pricing as well to considering. Also removal of anything that may be problematic (Like Zoidberg's random appearance in Unepic)

It takes time/money to develop games, and Greenlight hasn't been out that long.

By the way, Unepic is a good example, they write on their homepage: "A few months will be needed to see Unepic in Steam due to works of integration of Steam's services (clouding, achievements, etc) and to finish the multiplayer mode."
It's probably not all too wrong to guess, that similar reasons may be the case with quite a lot of other greenlit games as well.
