Do I need to keep the .vpk's after installing mods?
Or is this just like a .exe and once the install file is used to install a program, I can delete it, because it's still installed?

Going on 11gb and I'm wondering if I can get that back

You need to keep the .vpk files. They actually contain the files that the game refers to for mods, hence the term "addon".
